MICHEL BOYER — PROPRIETOR
Michel is a connoisseur of French quality and style of service, cuisine and hospitality. He has traveled the world to launch vast hotels for major corporations such as ITT Sheraton Hotels, developed a food service paradigm for the United Nations Headquarters in New York, and most recently held strict oversight of the operations at Brasserie 8 1/2 in midtown Manhattan.
With this experience and knowledge, he has created Brasserie L’Oustau de Provence for the residents and visitors to southern Vermont. Attracted by the region’s beauty and natural resources, Michel has developed the restaurant to embrace the Green Mountain vistas and feature a variety of locally sourced foods.
